How We Grow

Our focus is on raising vegetables with the best flavor. So we select heirloom varieties and others chosen for intensity of taste. We also believe that the same properties that make plants taste good also make them very healthy.

We use rows of corn-based mulch to control weeds without chemicals, with drip irrigation underneath to nourish plant roots without stress. Wide plant spacing gives each plant the room it needs to get nutrients without undue competition. This reduces yield, but we’re willing to make that trade-off. We’re trying to maximize flavor rather than production.

Cover crops and green manures are a big part of our process: We grow plants to feed the soil, and supplement with all-natural soil amendments for mineral content. We do not use any chemical fertilizers.

We are not certified organic, though we have a lot of respect for farmers who go through that process.

Post-harvest processing is also critical, and we appreciate the control we have over all steps of the process, timing harvest to be close to cooking, and handling our relatively low volume of produce with respect that would be difficult to achieve in a larger-scale operation.
