Pop-up dinner at Saratoga Apple: Cider-brined pork tenderloin is the centerpiece of this hearty, locally-sourced meal. Great for Mothers’ Day, or as an escape from Mothers’ Day, notoriously one of the worst weekends of the year to go out to dinner. Start with cream of asparagus soup. Follow with a simple salad of local baby greens and herb vinaigrette. Then cider-brined DuBreton pork tenderloin over garlic rosemary mashed potatoes. Asparagus and sweet pea risotto makes a great vegetarian option. Polenta cake with apple compote for dessert (or apple trio if you prefer gluten-free).
