    Duxelles, the savory blend of sauteed mushrooms and sweet onions cooked down to intensify flavor, was our most popular pizza last fall. Usually duxelles is reserved for fine dining but we're taking it downtown pizza-style, blending with Maplebrook Farm ricotta in a somewhat ugly but supremely delicious pizza.
